Suryaben's Homous

 

 

Suryaben's homous.

1 cup chickpeas (soaked 24 hours)
Pulp of 2 oranges (peeled and pipped)
fresh ginger according to taste preferences)
3 cloves garlic
Ajma and or Coriander
1 tsp oil
1 tsp salt
black pepper
1 or 1/2 chilli (fresh) optional.
Peppercorns

Cook the chickpeas until soft.
Liquidize oranges and seperate the pulp from the juice
Liquidize ginger with garlic, chilli (optional) and spices
Add cooked chickpeas, oil, salt and pepper
Mix all ingredients except the peppercorns.
Heat peppercorns in a little oil and add to main ingredients

 

 

 

The wonderful thing about Suryaben's cooking is that she wastes nothing! For example have a go at these two recipes:

Soya Milk recipe

1 cup of soya beans soaked for 24hrs then strained.
Add 4 cups water and liquidize till mushy
Bring mixture to boil
Whilst boiling all impurities will rise to the surface in a foam
Remove the foam from the surface
Strain through muslin cloth and store in bottles in fridge.

Soya Spread

Use the remaining mixture
Add juice of 1 lemon
garlic, ginger, coriander (fresh) and salt and pepper to taste
Liquidize all ingredients
Refrigerate and use as a spread.
